Lower temperature water helps provide a fuller body to the tea. Traditional wisdom has usually called for boiling the water in a kettle. We disagree. Boiled water loses oxygen in the water. As such, the brew will typically taste flat and void of minerals and crispness. Also, it is difficult to drink boiling water. Use one level teaspoon of leaf for twelve ounces of water, and brew for four minutes.
