Size: 16 oz. bulk loose tea Native Name: Haricha Origin: Nilgiri, India Plucking Season: Winter History: This tea comes from the famous Nilgiris or Blue Mountains in India, and from the first organic tea estate to be certified by Transfair International. The Blue Mountains are located in the South-Indian states of Tamil Nadu and Kerala. Tea is grown at elevations of 1,000 to above 2,500 metres. The principal town of the area is Udhagamandalam, although the old British name of Ootacamund, shortened to Ooty, is often used. In the town there are many buildings which look very British, particularly the churches. Long, deep green colored leaves, baked at high temperatures to give a strong, slightly brisk green tea. Flavor Profile: Strong, roasted, slightly fruity aroma. Brisk flavor with a full, smooth finish. Ingredients: 100% Organic Green Tea Leaves Certified Organic by: Quality Assurance International (QAI) Smaller leaf green teas are known for their bright, vegetal flavor and smoothness. To bring out these desired qualities while avoiding too much bitterness or astringency, we recommend using slightly cooler water. If the water is too hot, the leaf will stew, creating a bitter, spinachy cup. Moderately hot water, 150 to 170 F, with one teaspoon of leaf per cup and a steeping of 2 to 3 minutes provides 2 to 3 satisfying infusions.
